Brown Pears with Cheese can be used as either an appetizer (starter) or dessert with a cheese platter.Either way, this is a beautiful food that can be used at any special occasion throughout the year. Preparation is a little tricky but doesn’t take more than ten minutes.

Brown Pears with CheeseIngredients

  • 4 small brown pears (Note: I have tried this with green pears and it isn’t as good)
  • 6 ounces (170 grams) of blue-veined cheese (I used Stilton but you can select any blue cheese that you like.)
  • Thick cream
  • Olive oil spray

Instructions

Pre-heat oven to 350F (160C)(Gas Mark 4)

Using a corer, gently insert it into the end opposite the stem. Warning: The corer must not go all the way through the pear; you need to keep the stalk intact. Move the corer around a little to break off the pips and remove. You may need to use a paring knife after removing the corer to break the core free and remove it. Repeat this with all pears.

Spray pears with olive oil and place in the pre-heated oven for a period of approx. 15 minutes to soften the pears.

While the pears are cooking, place the cheese in a bowl and add one heaped tsp of cream. Using a fork, mix the cheese and cream into a paste. About the same consistency as a cake frosting (icing) mixture. Depending what cheese you select, you may need to add a little extra cream. Place paste into a bag with a medium nozzle and fill each pear with cheese as soon as they are cool enough to handle.

Note: If you don’t wish to use a piping bag you can stuff the mixture into each pear using whichever method you prefer.

If you wish to serve this dish as an appetizer (starter), it is best served warm on a bed of lettuce with a drip of extra virgin olive oil added just before serving.

If serving as part of a cheese platter, then it is best to serve cold on the platter.

Leave the stems in place because this adds to the presentation.
