This easy to prepare Broccoli Bacon Salad makes a great side dish for cookouts and pot luck gatherings. Broccoli and bacon blend with onions, raisins and sunflower seeds for a delightful combination of sweet and spicy with a lot of crunch.
Ingredients
2 lbs. fresh broccoli, cut into small florets
8 slices bacon, diced, fried crisp, and drained
1 small sweet onion, chopped fine
1 cup golden raisins
1 cup sunflower seeds
1 cup mayonnaise
1/4 cup white sugar
2 Tbsp apple cider vinegar
Instructions
Toss broccoli, bacon, onion, raisins and sunflower seeds together in a large bowl.
Whisk together the mayonnaise, sugar, and vinegar in a separate bowl.
Pour dressing onto salad and toss to coat well.
Taste test and add salt if desired.
Cover and chill several hours before serving. Overnight is best.
