- 2 Tbsp unsalted butter
- 3 Tbsp chopped onion
- 1 lb frozen, chopped broccoli
- 1 can cream of chicken soup, undiluted
- 1 can cream of mushroom soup, undiluted
- 1 cup minute rice
- 8 oz jar of cheese whiz
Preheat oven to 350 F.
Melt butter in a small pan.
Stir in onions and sauté for several minutes.
Pour mixture into a casserole dish with a lid.
Add both cans of undiluted soup and stir.
Add frozen broccoli, rice and cheese whiz. Stir until well blended.
Cover and bake for 1 hour OR microwave on high for 30 minutes.
If microwaving, stir every 10 minutes to avoid brown edges. If you prefer the browning, read a book while you wait.
When the casserole is finished cooking, keep the lid on for 5 minutes before serving.
Yield: 6 servings. If you double the recipe, add 15 minutes in the oven or 5 minutes in the microwave.
