Breakfast Casserole Recipe

Apples, onions, ham, cheese and hash browns all come together in this hearty Breakfast Casserole Recipe. This simple to make dish goes from stove top to oven all in a single pot for easy clean up afterwards.

Ingredients
1 apple, peeled, cored and chopped
1/4 Cup of onion, chopped
1/2 tsp sage
2 tbsp of water
1 Cup of cooked lean ham, diced
3 Cups of frozen hash brown potatoes, thawed
1/2 Cup of reduced fat cheddar cheese, divided
4 eggs
1 1/2 Cups of skim milk
1/4 tsp of salt

Instructions
Preheat the oven to 350F degrees.

In a ovenproof skillet, combine the apple, onion, sage and water.

Cook for 10 minutes, stirring occasionally, over medium heat.

Stir in the potatoes and ham and cook an additional 10 minutes.

Remove from heat and sprinkle cheese over the top of the heated mixture.

Whisk eggs, salt and milk in a small mixing bowl.

Pour over the ham and potatoes. Do not stir.

Sprinkle remaining cheese on top of the eggs.

Bake for 35 minutes or until a knife inserted in the center comes out clean.

Serves 6.
