Breakfast Casserole Recipe


Apples, onions, ham, cheese and hash browns all come together in this hearty Breakfast Casserole Recipe. This simple to make dish goes from stove top to oven all in a single pot for easy clean up afterwards.

1 apple, peeled, cored and chopped
1/4 Cup of onion, chopped
1/2 tsp sage
2 tbsp of water
1 Cup of cooked lean ham, diced
3 Cups of frozen hash brown potatoes, thawed
1/2 Cup of reduced fat cheddar cheese, divided
4 eggs
1 1/2 Cups of skim milk
1/4 tsp of salt

Preheat the oven to 350F degrees.

In a ovenproof skillet, combine the apple, onion, sage and water.

Cook for 10 minutes, stirring occasionally, over medium heat.

Stir in the potatoes and ham and cook an additional 10 minutes.

Remove from heat and sprinkle cheese over the top of the heated mixture.

Whisk eggs, salt and milk in a small mixing bowl.

Pour over the ham and potatoes. Do not stir.

Sprinkle remaining cheese on top of the eggs.

Bake for 35 minutes or until a knife inserted in the center comes out clean.

Serves 6.

  • 8 large eggs

  • 1 cup milk

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 6 slices bread, cubed

  • 2 cups cooked ham, diced

  • 1 1/2 cups shredded cheddar cheese

  • 1/2 cup chopped green onions

  • Cooking spray


  • Preheat your oven to 350ยฐF (175ยฐC). Grease a 9×13 inch baking dish with cooking spray.
  • In a large mixing bowl, whisk together the eggs, milk, Dijon mustard, salt, and black pepper until well combined.
  • Add the cubed bread, diced ham, shredded cheddar cheese, and chopped green onions to the egg mixture. Stir until everything is evenly coated.
  • Pour the mixture into the prepared baking dish, spreading it out evenly.
  • Bake in the preheated oven for 40-45 minutes, or until the casserole is set and the top is golden brown.
  • Remove from the oven and let it cool for a few minutes before slicing and serving
