Breakfast Burrito Recipe

This Breakfast burrito Recipe uses chili peppers, salsa, turkey sausage and egg substitute for a healthy morning meal with some extra kick. It also freezes well, so make a batch ahead to grab for those days when time is short.

  • 1 lb. turkey Italian sausage links, casing removed
  • 1 sweet red pepper, diced
  • 1 onion, diced
  • 4 (8 oz.) cartons of frozen egg substitute, thawed
  • 1 (4 oz) can of green chili peppers, chopped
  • 1 tsp chili powder
  • 10 (8 in) flour tortillas
  • 1 1/4 Cups of salsa

Instructions

Preheat oven to 350F degrees.

Coat a 13 x9  baking dish with non-stick cooking spray.

Cook sausage over medium heat until browned through.

Drain well and place in the prepared baking dish.

Spread red pepper and onion on top of the sausage.

Stir together egg substitute, green chili peppers and chili powder.

Pour over the sausage and pepper in the baking dish.

Bake for 30 minutes or until set.

Break up the egg and sausage mix with a spoon.

Place 2/3 cup of the sausage and egg mix onto the center of a tortilla.

Top with salsa and fold up the tortilla into a burrito.

This recipe freezes well. To freeze, wrap each burrito individually after completely cooled. To reheat, microwave on high for 2-3 minutes to warm through.

Makes 10 wraps.
