Batter Vegetable Cakes came into our household as a method of getting my grandson to eat vegetables. They immediately became a big hit with adults as well. Great simple recipe.

Batter Vegetable CakesIngredients

2 eggs
Self Raising Flour (All purpose flour)
Pinch salt
Milk
Corn kernels
Chopped onion
Chopped broccoli
Bacon pieces

Method

Make batter of sifted flour, salt, eggs and milk. Whisk vigorously until smooth.

Mix the vegetables into the batter – be as inventive as you wish.

Cover baking tray with baking paper.

Spoon small cakes of battered vegetables onto baking tray.

Put in a pre-heated oven (400F / 200 C)

They are cooked when you can push a skewer into the vegetable cake and it comes out with nothing sticking to it. Takes about 15 to 20 minutes.
