- 2 (5 oz) cans white albacore tuna in water, drained
- 1/2 cup vinaigrette (any type you like)
- 1 lemon, zested
- 1 garlic clove, minced
- 1 tsp dried oregano
- dash salt and pepper
- 1 cup arugula, rough chopped
- 1 cup assorted salad greens
- 2 Roma tomatoes, diced
- 1 Tbsp capers
Prepare the dressing by whisking together the vinaigrette, lemon zest, garlic, and oregano.
Season with salt and pepper to taste.
Toss drained tuna, arugula, and salad greens.
Top with tomatoes and capers.
