- 1 garlic clove, minced
- 1 T Dijon style mustard
- 1/4 t dried rosemary
- 1/8 t dried thyme
- 1/4 t salt
- 1/4 t pepper
- 2 T red wine vinegar
- 1/8 C olive oil
- 1 bunch Arugula, rinsed and pat dry
- 1 C Romaine lettuce, rinsed and pat dry
- 3 T sundried tomatoes, packed in oil, drained and chop fine
- 1/4 C Parmesan cheese, grated
Into a jar with a tight fitting lid, place garlic, mustard and vinegar.
Tighten lid and shake until ingredients are combined.
Add rosemary, thyme, salt and pepper and shake again.
Add wine and olive oil and shake briskly until all the ingredients are mixed well.
Combine arugula, romaine lettuce and tomatoes in a bowl.
Pour the dressing over the salad and toss to coat well.
Divide between 2 salad plates and sprinkle with the Parmesan cheese.
