Almond chicken salad probably started in the middle east and has been adapted over the years. With grapes, pineapple and Cool Whip, it’s well worth trying. Submitted by David McCarthy, Australia
- 2 cups cooked diced chicken
- 1 cup celery
- 1 cup grapes (green seedless)
- 2 cup almonds
- 1/2 cup pineapple (drained)
- 1 Tbsp lemon juice
- 2/3 cup Cool Whip
- 2/3 cup Miracle Whip
Combine first 6 ingredients. (May be made to this point the day before.)
Mix Cool Whip and Miracle Whip. Stir in.
Serve with croissant or in melon bowls.
Substitute macadamia or peanuts for the almonds.
I tried this with a diet Italian dressing and it was superb.
